Chilled Black Bean and Kale Salad Recipe

Kale is back and it’s bringing some friends to the party. Try this unique and healthy salad at home or at your next potluck. Did you know that eating leafy greens like kale and spinach are not just good for your overall health but they are also good for your teeth? They are high in calcium, which builds your teeth’s enamel. They also contain folic acid (a type of vitamin B) that has numerous health benefits, including possibly treating gum disease in pregnant women. Additionally, the black beans are another source of calcium. Bon(e) appetit!

INGREDIENTS

  • ½ kale, chopped
  • ½ cup black beans
  • ¼ cup diced cucumber
  • 1 tablespoons green apple relish
  • 1 lemon, juiced
  • ⅓ cup crumbled feta
  • 1 four minute egg
  • Salt
  • Pepper

DIRECTIONS

  1. In a bowl, combine kale, black beans, cucumber, relish, and lemon and mix well. Place in an airtight container. In a separate container, place the feta and the egg with the shell still intact. Store everything in the fridge.

AT YOUR DESK

  1. Peel the egg and cut it in half.
  2. Transfer salad to a bowl and top with feta and egg. Season with salt and pepper as desired.
